Curried Coco Pumpkin Seed Party Mix

Now that it’s officially fall, we can enjoy all things pumpkin, including the seeds! Branch out from sweet fall dishes and spice things up with my savory Curried Coco Pumpkin Seed Mix. This dish not only tastes delicious, it can give you a nutrient boost too! The pumpkin seeds are loaded with protein, healthy fat, fiber and magnesium, and the coconut is rich is medium-chain fatty acids, iron, manganese, phosphorus and zinc. Enjoy it as a snack or sprinkle on top of fall soups and salads!


  • 1/2 cup organic, raw pumpkin seeds
  • 1/4 cup shredded coconut
  • 1 tsp. lime juice
  • 1 tsp. olive oil
  • 1.5 tsp. curry powder
  • Sea salt to taste


  • Mix ingredients together in a bowl.
  • Adjust sea salt to taste.
  • Spread pumpkin seed-coconut mixture on the tray of a dehydrator, and dehydrate at 115 degrees, until party mix is completely dry.
  • Serve and enjoy!
