Here’s a make-ahead treat that’s super delicious and sure to please. Creamy inside with a hard chocolate shell, these taste indulgent but are a healthy alternative to many frozen delicacies. Great for an afternoon snack or a cool treat on a hot summer night. Allergy concerns? Swap milk and chocolate for alternatives that work for you!

Chocolate Peanut Butter Banana Ice Cream Bars

Servings: 10

Ingredients

POPSICLES
  • 6 bananas
  • ½ cup creamy peanut butter
  • ¼ cup milk
  • 2 Tbsp. sweetened condensed milk, optional
CHOCOLATE DIP
  • 12 oz. dark, semi-sweet, or milk chocolate chips
  • 3 Tbsp. refined coconut oil
  • 1 cup crushed peanuts, optional

Instructions

  • Cut bananas into slices and freeze until solid, 2-3 hours or overnight.
  • In a food processor or blender, add frozen bananas and blend until pieces are finely chopped.
  • Add peanut butter, milk, and sweetened condensed milk, if using. Blend until smooth and creamy.
  • Split mixture across 10 popsicle molds and freeze overnight.
  • For the chocolate dip, heat up chocolate chips and coconut oil in a saucepan on low heat, stirring constantly. Do not walk away. You don't want the chocolate to overheat and seize. Once melted, remove from the heat and pour into a tall container that’s deep enough to dip the popsicles. If melting the chocolate right before dipping, let it cool to room temperature.
  • Remove popsicles per mold instructions.
  • One by one, dip the popsicles in the chocolate dip. Shake any excess off, back into the container. Then dip in crushed peanuts. Place on parchment paper in the freezer, or hold for a minute until the dip solidifies and enjoy right away!

Notes

TIP: Popsicles can be stored in an airtight container in the freezer for up to 3 weeks.
